Sofrito (Traditional Puerto Rican Style)

Description

Sofrito, additionally known as recaito, is a staple to seasoning many Puerto Rican meals dishes. It is made in distinctive versions across the Caribbean Islands. The base which include peppers, onion, garlic, and tomatoes. However, Puerto Rican Sofrito hardly ever has tomatoes and uses two important elements: culantro and ají dulce. This seasoning is used to prepare arroz con gandules, pasteles, and plenty of different Puerto Rican dishes.

Ingredients

  • 1 entire Yellow Onion Roughly Chopped
  • 1 entire Red Bell Pepper, Seeded And Chopped
  • 1 complete Green Bell Pepper, Seeded And Chopped
  • 1 bulb Garlic
  • 14 complete Ají Dulce Seeded
  • 10 leaves Culantro
  • 1 Tablespoon Salt
  • 1 Tablespoon Black Pepper
  • 1 Tablespoon Oregano Grounded
  • ⅓ cups Olive Oil, Extra Virgin

Preparation

Place chopped ingredients into a big-sized food processor or blender.

Break apart the garlic head into cloves and peel away the outer papery skin. Place garlic cloves, aji dulce, and culantro leaves into the meals processor or blender. Add salt, black pepper, and oregano. Finally, add olive oil and mix everything collectively.
