Ingredients
- four whole Large Fresh Zucchini, Washed
- 2 Tablespoons Olive Oil
- 1-½ teaspoon Smoked Paprika
- 1 teaspoon Salt
- ½ teaspoons Pepper
- 2 Tablespoons Chopped Fresh Basil
- 2 Tablespoons Chopped Fresh Thyme
- 2 Tablespoons Chopped Fresh Chives
- three ounces, weight Goat Cheese
Preparation
Preheat a big skillet over medium warmness till particularly warm. While the skillet is heating, slice the zucchini very thin. Add the olive oil to skillet and swirl to coat, then toss within the sliced zucchini. Spread in a single even layer and let it cook for about three-four mins with out moving it —this offers it a nice sear! Sprinkle with the paprika, salt and pepper and toss to coat. Saute for another 5-8 mins till the zucchini is gentle.
Remove from the heat, sprinkle with the chopped herbs and collapse the goat cheese on top. Serve heat or at room temperature!
