A sparkling, simple and wholesome sandwich opportunity. Made with shredded chicken, edamame beans, creamy avocado and zesty lemon. A first-rate way to dissipate leftovers!
Makes 2 slices.
Ingredients
- 30 grams Edamame Beans
- 50 grams Avocado Very Ripe, Skin And Pit Removed
- 70 grams Cooked Chicken Breast
- 70 grams Cucumber, Diced
- ½ entire Lemon, Juice Only
- 2 slices White Or Brown Bread
- Lemon Wedges And Fresh Parsley, For Garnish (optional)
Preparation
Bring a saucepan of water to the boil and blanch edamame beans for 3 minutes. Rinse in cold water and drain properly.
In a bowl, mash avocado the use of the returned of a fork. Add hen, edamame, cucumber and lemon juice and blend together.
Toast bread slices after which collect the aggregate on pinnacle. Garnish with lemon wedges and some parsley (optional) and season with a bit salt and a terrific quantity of black pepper.
